New Downtown Business Report : February 2019

WithCo Coffee

Opened January 28, 2019

570 Higuera Street, Suite 190

WithCo Coffee has been a lifelong dream for founders Walker Sotello and Rydian Searles. The duo have been best friends since kindergarten and have been aspiring to open a business together ever since starting their first lemonade stand. Searles finished college and decided it was time to move back to the Central Coast to start the first cafe with Sotello. After many conversations, they decided to team up with sister company WithCo Cocktails in Nashville, TN to set themselves apart from other coffee shops by infusing their cocktail mixers into the coffee beverages. WithCo Cocktails has created a hand batched cocktail mixer with fresh ingredients to provide unparalleled flavor so you don’t have to sacrifice quality for convenience. Each bottle allows you to skip the prep work and enjoy quality cocktails with the good company around you. WithCo Coffee is roasted in Oakland, CA by experienced roasters, who happen to be family and lifelong friends. They have crafted four different single origin coffees based on seasonal conditions. WithCo prides themselves on their unique flavor profiles and hope to become an integral part of their customers daily routine. With the help of Farid Shahid(partner), Lauryn Searles(cafe manager), Eden Searles(roaster), and Kevin Wilcox(roaster) WithCo Coffee was born. WithCo Coffee provides a space to gather with community over a quality beverage and enjoy the beautiful weather in the Creamery Marketplace Courtyard. They are looking forward to serving the residents of San Luis Obispo and beyond.
